? Sesame Beef Soba Noodle Salad Recipe

What you'll need for noodle bowl:

  • 100 grams green tea soba noodles
  • 200 grams beef
  • Handful coriander (chopped fine)
  • Half an avocado (sliced thin)
  • 2 tablespoon toasted sesame seeds
  • Pinch of fresh mint (chopped fine)
  • Handful loose salad leaves
  • Half handful cherry tomatoes (sliced into quarters)
  • 1/4 red onion (sliced thin)

 

What you'll need for the sauce/ dressing:

  • 2 tablespoon sesame oil
  • 1 tablespoon tahini
  • 2 teaspoon brown sugar
  • 2 teaspoon light soy sauce
  • 2 teaspoon rice wine vinegar
  • 2 tablespoon water

 

What you'll need to serve:

  • 1 big salad bowl
  • Chopsticks

 

Step by Step Instructions:

  • Heat up a pan with a dash of oil and sear steak to your liking, then remove from the heat and rest for 5-10 minutes
  • Bring pot of water to the boil and cook noodles for 4-5 minutes until soft (make sure to keep stirring the noodles so they don't stick together). Strain the noodles once ready, run under cold water and place to the side
  • Line your bowl with the fresh salad leaves, red onion, avocado, cherry tomatoes, mint and coriander.
  • Add in all your sauce ingredients into a jar and shake until it's all mixed in together
  • Slice steak and serve over the top of the bowl
  • Pour over your sesame sauce
  • Sprinkle over your toasted sesame seeds and serve
